Cooking dry pasta in the sauce instead of a separate pot of water does two things: it saves the dishes, and the starch from the pasta thickens the sauce so it clings. Brown the sausage, pour in the rest, stir now and then, done.

Ingredients

Gear

  • large pot or deep skillet with a lid

  1. Brown the sausage

Cook the sausage in the pot over medium-high, breaking it into small pieces, until browned. Add the onion for the last few minutes to soften.

  2. Garlic

Stir in the garlic for 30 seconds, until it smells good.

  3. Everything else

Add the crushed tomatoes, chicken stock, pasta, and salt. Stir, scraping up anything stuck to the bottom, and bring to a boil.

  4. Simmer

Turn the heat down to a lively simmer, cover, and cook until the pasta is tender, stirring every few minutes so it does not stick.

  5. Finish

Take the pot off the heat. Stir in the spinach until it wilts, then the parmesan. Let it sit a couple of minutes to thicken.

Notes

  • tipIf the pot looks dry before the pasta is done, add a splash of water or stock.
  • variationStir in 1/2 cup of heavy cream with the parmesan for a creamy version.
  • variationSwap the sausage for ground beef and add a teaspoon of Italian seasoning.
