Smoked sausage is already cooked, so it only needs to brown. The potatoes are what take time, so they get a head start in the oven and everything else joins them halfway.

Ingredients

Gear

  • foil
  • large sheet pan

Method

  1. Heat the oven

Set the oven to 425°F and line the sheet pan with foil.

  2. Potatoes first

Toss the potatoes on the pan with half the oil, the salt, pepper, garlic powder, and paprika. Spread them out cut side down and roast.

  3. Add the rest

Add the sausage, peppers, and onion to the pan with the rest of the oil and toss everything together right on the pan.

  4. Roast

Roast until the potatoes are tender and browned and the sausage edges are crisp, stirring once halfway.

Notes

  • tipGive everything room. A crowded pan steams instead of browning; use two pans if you double it.
  • variationSwap the potatoes for sweet potato cubes, or add broccoli florets with the sausage.
  • pairingA squeeze of mustard on the side.
